"Since nine months of closure with three lockdowns, we are always gradually losing money," says Pascal Aussignac, who owns and manages Club Gascon, a Michelin-starred French restaurant in one of London's prime business districts.
The hospitality industry has been hit hard by COVID-19 restrictions and high-end restaurants like Club Gascon struggle as they adapt to the new business model of delivery and collection orders only in yet another lockdown.
